FOOD | 1, 2, 3... Pumpkin-Carrot Cake Recipe

The easiest Pumpkin-Carrot Cake recipe in the whole world: 





 
Combine 1 box of Spice Cake mix, 1 can of pumpkin, and 1-2 cups shredded (or grated) carrots. That's it. No eggs. No oil. Just mix and pour into any size pan and bake according to the spice cake mix package. 

Top with lite cool whip for a low calorie "frosting" option. Tastes like pumpkin pie!

TIP: Using the pumpkin purée in place of  oil/butter and eggs is a deliciously smart way to cut calories and reduce fat. 

Of course, if you are looking for a low calorie carrot snack, your best bet is still to eat them raw.
